Friday Favourites - Cinnamon Cookies

These cookies are a HUGE hit in our house, and everyone raves about them! They're relatively simple, but very morish. They soften with time, so we're all happy - crunchy when they first cool down and nice and chewy the next day. You could substitute the plain flour and baking powder for SR flour.

Makes around 4 dozen - 1 point per biscuit

Ingredients
1 cup castor sugar
1/2 cup butter
1 large egg
1 teaspoon vanilla
1 1/2 cups plain flour
1 1/2 teaspoons cinnamon
1 teaspoon baking powder
1/4 teaspoon salt
cinnamon sugar (mixture of sugar and cinnamon, I just make it)

Method
1. In a mixer bowl, cream sugar and butter; beat in egg and vanilla.
2. Combine flour, cinnamon, baking powder and salt; add to butter mixture and mix well.
3. Cover and refrigerate for 2 hours, or until firm enough to roll into balls.
4. Shape dough into small balls about 2cm in size. Roll in cinnamon sugar to coat.
5. Set cookies 3cm apart on lightly greased biscuit tray.
6. Bake at 180 degrees for 10 minutes or until edges are lightly browned.
7. Cool a little on the tray, then remove to racks to cool completely.
