I made these into mini versions last week, and made 36 from this recipe. You could also serve two up as a main meal, and it would serve 6, with salad. We had my family over for my sisters birthday on Monday, and I didn't get to take any pictures because they were devoured within 10 minutes of me putting them out!
I mixed these up in my Kitchen Aid with freshly minced beef and breadcrumbs.
Katy's Homemade Sausage Rolls
makes 36 mini-rolls or serves 6 (2 per serve)
3 pieces puff pastry (I used the reduced-fat version to save points)
500g lean beef mince
2 pieces bread, crumbed in the food processor (or about 1 cup - you may need a little extra if you add the grated vegies)
1 egg
1 tsp curry powder
1 dash worchestershire sauce
1 tablespoon tomato sauce
1 carrot, finely grated (optional)
1 zucchini, finely grated (optional)
1. Take out pastry sheets to thaw, and cut in half lengthways.
2. Mix together remaining ingredients, then spread over 6 rectangles of pastry lengthways.
3. Cut sausage rolls as desired.
4. Bake at 200 degrees (fan-forced) for approx 25 minutes until golden brown.
5. Serve with lashings of tomato sauce, and salad if it's for a meal.
These are such a hit with my kids and family, everyone requests them!
